Orange Chocolate Bliss Pie
My daughter Emily and I LOVE to come up with new recipes. She is 13, so anything we can do together without it errupting into a pout fest or fashion show is a bonus! Cooking is something we love to do. This is a recipe we came up with and published in our church’s cookbook. Unfortunately we had to eat the practice pies (which, oddly enough, tasted EXACTLY like the finished product. Hmmmm….) but when all was said and done this is what we came up with. I hope you enjoy eating and serving it as much as we enjoyed creating it!
1 6-ounce Oreo pie crust
1 cup granulated sugar
1/4 cup cornstarch
1/8 teaspoon salt
4 large egg yolks
2 1/3 cups orange juice (no pulp)
3 tablespoons butter
1/2 teaspoon orange extract
1 8-ounce tub chocolate Cool Whip
In a medium sauce pan whisk together sugar, cornstarch and salt. Add egg yolks and juice to cornstarch mixture. Whisk until smooth. Cook over medium heat until thickened. Bring to a boil; boil whisking constantly for 1 minute. Remove from heat. Add butter and flavoring. Stir until well incorporated. Pour filling into Oreo crust. Refrigerate until completely cool and firm. Top with chocolate Cool Whip before serving. YIELD: 6-8 SERVINGS
